Oven Barbequed Chicken Kielbasa
6 boneless, skinless chicken breasts (thin-cut or what's
sometimes called "quick cooking chicken" is best)
2 14-ounce kielbasa sausages, cut into 3/4" to 1" pieces
McCormick Low Sodium Chicken Seasoning
1 to 2 cups bottled Barbeque Sauce
2 11x17-inch baking pans
Preheat oven to 350°. Rinse and pat chicken breasts dry. Grease or line both pans with foil; sprinkle a small amount of Chicken Seasoning into the bottom of one baking pan. Lay the chicken in the seasoned pan (one layer, don't overlap); sprinkle a small amount of Chicken Seasoning on the tops of chicken. Next place the kielbasa pieces in the second pan with the cut sides down (seasoning isn't necessary). Bake for 20 minutes.
While meat is cooking, thin the barbeque sauce with water, or if you prefer, leave it thick from the bottle. It sticks to the meat better if it's thinned. Remove meat from the oven after 20 minutes. Brush/pour barbeque sauce onto both the kielbasa and chicken breasts; put the kielbasa in the pan on top of chicken. Brush/pour with more barbeque sauce as desired. Bake for another 10 to 15 minutes, or just long enough to make sure chicken is cooked through (but not overcooked) and for the kielbasa to brown and barbeque sauce gets sticky. Serve with steamed rice and a hot vegetable, if desired. Yield: 8 servings
Note: This recipe can also be cooked using skewers on the barbeque grill (as pictured). Changes to above recipe are as follows: Cut the chicken into 1-inch squares instead of using thin, quick-cook cut; season the chicken before putting onto skewers. The kielbasa is cut the same as above. Pineapple chunks, zucchini, peppers, onion petals, cherry tomatoes, anything you like can be tucked between chicken and kielbasa, if desired. Grill until chicken is cooked mostly through, then brush with barbeque sauce; turn, and grill a bit longer until sauce is hot and sticky. The key to the grilling method is to cook the chicken without overcooking it (I'd guess 10 minutes on each side using the grill). The kielbasa is already cooked when purchased so it's on the skewer to enhance flavor, and it's much tastier if it's browned or caramelized. Chicken and any type of sausage cooked together make a flavorful combo that can't be beat.
